Note: Tube meat refers to any kind of meat that is tubed, like a hot dog, bratwurst, andouille, sausage, etc.
Instead of sharing a ‘recipe’, I thought I’d introduce a fun technique called spiralizing! This holiday, try adding some fun to your next cookout with this technique.
When you spiralize (spiral cut) a tube meat, you increase its surface area and create edges all around. As the tube meat grills, you get more charring and crisping, which gives your dog lots of that smoky barbecue flavor you crave. Even with the extra direct exposure to heat, spiralized tube meats aren't prone to drying out, so you get the best of both worlds: a tube meat that's charred and crispy and also juicy! It's also very popular with children or the kids at heart because it makes it bounce like a slinky!
Spiralized Tube Meats: Fun for the whole family…
Spiral cutting your tube meat creates fabulous crevices that cradle all the toppings you want to add, whether you are a ketchup- or mustard-only fan or like all the fixings—onions, relish, sauerkraut, peppers, you name it. Nothing will slide off your tube meat. Spiralizing takes very little effort but it makes your tube meats look cool. Plus, a spiralized dog fills the bun from end to end and even enticingly sticks out over the edges! You don’t even need to enjoy it with a bun, in my opinion.
I’ve really been enjoying this Grateful Dead show from 1978 at the Dane County Coliseum in Madison, Wisconsin. Listen here.
Primeaux Spiralized Tube Meat
To get started, make sure you have some skewers on hand. They'll help your meat stay stretched out while cooking and keep it crispy all the way through.
Plus, using skewers will prevent you from cutting the meat all the way through.
Slide the skewer into the center of the tube meat.
Holding your knife on a bias, slowly sink the knife into the tube meat.
Slowly turn the skewer, creating a spiral. Next, stretch the tube meat on the skewer to allow the heat from the grill to penetrate and crisp the meat evenly.
Add your meats to your grill, turning it periodically to cook evenly.
I really love how it gets crispy all the way through and all the crevices are a great place for extra condiments!
I hope that you are able to enjoy this time with your family and friends.
I am taking a few days away from my shop and I can’t wait to share with you my travels in next week’s post!
Stay cool out there—
